In 1892, Rafael Alvarez L. established Finca Santa Maria in the slopes of Apaneca Ilamatepec Mountain Range, near Calzontes Arriba. After four generations of coffee cultivating, Hermanos Alvarez Diaz now owns the plantation. Santa Maria is planted with Red Bourbon / Pacas variety and is cultivated under native shaded trees which improves and conserves the soil and provides habitation for different wildlife. The commitment to developing sustainable practices and excellent growing conditions has led to the farm producing one of the finest coffee cherries that are then processed at El Borbollon mill which is managed by Eduardo Alvarez, a family member.
